Vegan: Veggie Pudding Parcels

Yorkshire puddings are just pancake mix cooked in the oven! Needless to say, these are little vegetable Trojan horses and are delicious, home warming food.

Ingredients:

1 + 1/3 cup milk
1 cup self raising flour
1 tbsp apple cider vinegar
Pinch of salt

The apple cider vinegar will both inflate the texture, and absorb the liquid once all the mix is together. It makes it physically smaller than how it would be without it.

To begin: stir the apple cider vinegar in with the milk and leave for five minutes to create buttermilk.

Next: add the flour. Using a whisk or a fork, mix it up with soft and fast upward motions. Once it is smooth, wait for ten minutes. DO NO STIR AGAIN.

Then, using a ladle, pour the mix evenly into 12 cup cake baking tray holes.

Here, is where I added the sneaky veg!! Now the mixture will rise over your veg, so don’t be put off if it isn’t covered by the Yorkshire pudding mix. You can add what you want!: Spinach, tomato; Carrot and onion; broccoli, cauliflower, peas. It’ll all taste very nice!

Bake for half an hour then remove to cool. Served best with gravy!

I store mine in the fridge and consume over the course of a 3 – 5 days.
